The proximate composition, amino acids and fatty acid profile of the body tissue of Litopenaeus vannamei were determined. The level of protein, carbohydrates, lipids, ash and moisture in the tissues was recorded as 14.01, 0.22, 1.39, 0.91 and 79.7%. Totally 17 amino acids were identified, among these arginine, cystiene, histidine, isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tyrosine, valine were found as essential amino acids (EAA) and alanine, asparagine, glutamine, glycine, proline and serine noticed as non-essential amino acids (NEA). Maximum and minimum value of both EAA leucine and cysteine were recorded as 9.98 and 0.19 mg. Similarly, the maximum and minimum level of NEA such as glycine and proline were recorded as 11.88 and 1.04 mg. Eighteen individual fatty acids (FA’s) were identified including 10 SFA’s and 8 PUFA’s. A higher level of 31.41% of palmitic acid and minimum of 0.04% of undecylic acid 0.04% was recorded. A maximum of 7.5% EPA and least of 0.04% α-linolenic acid 0.04% were noticed. Present study emphasizes the occurrence of notable quantity of FA’s besides protein in the tissues of farmed white legged shrimp L. vannamei.
