Diabetes Mellitus is spreading worldwide as an epidemic characterized by the cessation in the ability of the tissues to utilize carbohydrates. It occurs throughout the world, but the incidence of occurrence is more common in developing countries due to the trends of urbanization and lifestyle changes, especially switching to a "Western-style" diet. Adequate nourishment is an essential prerequisite to human health and productivity. It has long been suggested that diet is crucial in the development of insulin resistance although conclusive human data is lacking. However, some detractors of “modern” innovations in the diet have relied on legumes especially beans for sustenance and health augmentation. Red Kidney beans (Phaseolus vulgaris L.) have been somewhat overlooked and played an integral part of the development of many cultures which are intricately woven into the fabric of human history. Therefore, keeping in view the present scenario, an evaluation and enhancement of nutritional quality of kidney beans after using appropriate household practices- hot water blanching and to explore the acceptability of conventional recipe such-Missi Roti. Nutrients, antinutrients and antioxidants estimations were done in native and processed form of variety by using standardized procedure (AOAC). Organoleptic evaluation was conduct on the basis of 9 point hedonic method by 15 semi-trained panel members. Data obtained was subjected to the analysis of Mean and Standard Deviation.
